Homemade Granola

Healthy Refined Sugar Free Granola

Ingredients:

  • 1+1/2 cups certified GF rolled oats

  • 1/3 cup nuts of choice (e.g., almonds, walnuts, pecans)

  • 1/3 cup shredded coconut

  • 3 tbsp coconut oil (melted)

  • 1/4 cup agave or maple syrup

  • 1 tbsp vanilla extract

  • 3 tbsp chia seeds

  • 1 tsp pink salt

  • Optional: flax seeds, protein powder, dried fruit (e.g., raisins, cranberries, apricots), cacao nibs, etc.

Instructions:

  1. Preheat the oven: Preheat your oven to 325°F (150°C) and line a baking sheet with parchment paper or lightly grease it.

  2. Prepare dry ingredients: In a large mixing bowl, combine the rolled oats, nuts, shredded coconut, chia seeds, pink salt, and any other optional dry ingredients like flax seeds or protein powder. Mix well to ensure even distribution.

  3. Prepare wet ingredients: In a separate small bowl, mix together the melted coconut oil, agave or maple syrup, and vanilla extract until well combined.

  4. Combine wet and dry ingredients: Pour the wet mixture over the dry ingredients in the large mixing bowl. Use a spatula or wooden spoon to thoroughly mix everything together until the oats and nuts are evenly coated.

  5. Spread on baking sheet: Transfer the granola mixture onto the prepared baking sheet. Use the back of a spoon or spatula to spread it out into an even layer. Parchment paper is great for easy clean up!

  6. Bake: Place the baking sheet in the preheated oven and bake for 15-17 minutes, mix up granola, bake once again for 5 additional minutes or until granola is golden brown (not burnt!)

  7. Add optional ingredients: If you're adding dried fruit or cacao nibs, sprinkle them over the granola during the last 5-10 minutes of baking, and lightly press them into the mixture.

  8. Cool: Once the granola is done baking, remove it from the oven and allow it to cool completely on the baking sheet. It will continue to crisp up as it cools.

  9. Store: Once completely cooled, transfer the granola to an airtight container or glass jar for storage. It can be kept at room temperature for up to 2 weeks, or longer if stored in the refrigerator.

I love to put the granola on top of dairy free yogurt, my protein whip or sprinkled on top of PB toast.
